Toffee Apples are always great treat in Scotland when the carnival comes to town. but in America they are associated with halloween.
Halloween or Samhain is an ancient pagan celebration associated with the last day of Summer, Often seen as a feast for the dead, Samhain is sometimes referred to as the Feast of Apples. Apples were considered a symbol of immortality by the ancients and toffee apples seem to keep this ancient tradition alive.
Ingredients
225g demerara sugar 110ml water 0.5 tsp vinegar 2 tbsp golden syrup 25g butter For the apples 6 dessert apples 6 wooden skewers, for holding the apples – ice lolly sticks will do
Method
1. Add sugar to water and dissolve over a moderate heat, once dissolved add vinegar, syrup and butter.
2. Bring mixture to the boil and cook without stirring for about 10 miniutes.
2. While toffee is cooking, pierce each apple with a wooden stick, then dip each apple into the hot mixture, rotating gently so that each apple is fully coated.
3. Leave to harden on a lightly greased tray before serving.
4. Wrap the toffee apples in cellophane, if planning to keep for a couple of days. |
