Potato Scones
Potato scones are very popular served with breakfast,  the basic ingredients used in the preparation of Potato or "Tattie Scones" means they are suitable for vegetarians and vegans alike.

Although the recipe below asks for (225g) of boiled Potatoes, most people making mashed potatoes will simply add a couple of extra tatties for use in this recipe.

Weights are not that important and should only be used as a rough guideline, Scottish Mothers simply experimented and found a recipe the whole family enjoyed, i suggest you do the same.

HINT: Potato Scones and Macaroon Bars are a great way of using up leftover mashed potatoes.
(waste not, want not, as my GrandMother used to say)

Basic Potato Scone Recipe:
Half pound (225g) boiled and mashed potatoes
2.5oz (65g) flour
3 tablespoons melted butter
Salt and Pepper to season.


Method:
Add the butter and seasoning to mashed potatoes.

Mix in enough flour to make a stiff dough.

Turn the dough out onto a floured surface and roll until about quarter of an inch thick.

Cut the dough into six inch circles and then into quarters.

Prick all over with a fork and cook on a Griddle or in a heavy pan, which has been lightly greased.

Cook each side for about three minutes or until golden brown.

Lastly, enjoy a traditional scottish breakfast dish.
